Peanut Butter Cups with a Blueberry Center


  • 1 cup of smooth peanut butter
  • 1/2 cup of raw coconut oil
  • 1/4 cup of maple syrup
  • 3/4 cup of dark dairy free chocolate chips
  • 1/2 cup of frozen blueberries


  1. Combine peanut butter, coconut oil, and maple syrup into a medium sized bowl and stir well

  2. Pour peanut butter filling into cup molds, fill about halfway, then place in freezer for 10 minutes

  3. In a small pot on medium low heat add blueberries and cook until a jelly like texture forms

  4. Remove cups from freezer and use a spoon to scoop out the center, pour blueberry filling into the center of cups, place in freezer for 5 to 10 minutes

  5. Remove cups and fill with remaining peanut butter filling, place back in freezer for 10 minutes

  6. Double boil chocolate chips until completely melted, remove cups from freezer and roll the top of the cups in melted chocolate, then press a few frozen blueberries into the center of each cup

  7. Place back in freezer for 5 minutes, once time is up remove and enjoy, keep stored in freezer
