Pesto Poppers
Ingredients
- 3 eggs
- 1/4 cup coconut flour
- 1 tsp baking powder
- pinch of salt
- spinach (fold in)
- pesto
Preparation
Mix eggs, flour, baking powder and salt until fully combined then fold in spinach
I used a cookie scooper to transfer over the mixture into the mini muffin pan (make sure to line with cupcake lines or parchment paper) and lastly place a dollop of pesto on top of each mini muffin and swirl with a toothpick or whatever you have on hand! Bake at 350F for about 15 minutes
