Pink Pitaya-Cranberry Nicecream with Recipe 🌸
Ingredients
- 1 frozen banana
- 1/4 cup frozen cranberries
- 1 fresh or frozen pink pitaya (optional: 2 tablespoons of powder)
- 3 tablespoons of coconut milk or water
- 3 teaspoons of chia seeds
Preparation
In a blender, combine the frozen banana, frozen cranberries, pink pitaya, coconut milk (or water), and chia seeds.
Blend on high until the mixture becomes smooth and creamy. You may need to stop and scrape down the sides of the blender as needed.
If the mixture is too thick, you can add a little more coconut milk or water to achieve your desired consistency.
Once blended, pour the mixture into a bowl.
You can enjoy it right away as a soft-serve consistency, or you can place it in the freezer for about 1-2 hours for a firmer texture.
Before serving, you can top the nicecream with additional fruit, nuts, seeds, or any other desired toppings.
