Refreshing Vegan Berry Coconut Jelly

Ingredients

  • 250ml coconut milk
  • 1tbsp agar flakes or vegan gelatine leaves
  • 1tbsp chia seeds
  • 1tspn vanilla essence
  • 1tbsp-2tbsp agave nectar or your favourite sweetener
  • Assorted berries (raspberries, blueberries, blackberries, kiwi berries)

Preparation

  1. Heat 250ml of your preferred coconut milk on low heat.

  2. Chop up your favourite berries.

  3. Place the berries in little bowls.

  4. Without letting the milk boil, add 1tbsp agar flakes or vegan gelatine leaves.

  5. Add 1tbsp chia seeds.

  6. Add 1tspn vanilla essence.

  7. Add 1tbsp-2tbsp agave nectar or your favourite sweetener.

  8. Let the milk cool down for 2mins and pour onto the fruit bowls.

  9. Chill in the fridge to solidify.
