Pizza Stuffed Sweet Potatoes
Ingredients
- 2 medium sweet potatoes
- 1/2 yellow onion
- 16 ounces ground chicken
- 1 medium zucchini, chopped
- 1 jar of Rao's pizza sauce
- Chopped pepperoni
- Banana peppers
Preparation
Preheat the oven to 400°F (200°C).
Wash and scrub the sweet potatoes. Pierce them a few times with a fork to allow steam to escape.
Place the sweet potatoes on a baking sheet and bake in the preheated oven for about 1 hour or until they are tender when pierced with a fork.
While the sweet potatoes are baking, heat a large fry pan over medium heat. Sauté the chopped yellow onion until softened.
Add the ground chicken to the pan and cook until it's fully cooked and browned.
Stir in the chopped zucchini and the jar of Rao's pizza sauce. Let the mixture simmer on low heat until the sweet potatoes are done.
Once the sweet potatoes are baked, carefully slice them open lengthwise.
Stuff the sweet potatoes with the ground chicken mixture.
Top the stuffed sweet potatoes with chopped pepperoni and banana peppers.
Serve the pizza stuffed sweet potatoes as a delicious and customizable dinner.
