Potato and Tofu Waffles
Ingredients
- 1 russet potato, shredded
- 1 small yellow onion, diced
- 1/4 cup diced pepper
- 1/4 cup chopped green onion tops
- 1 tsp kosher salt
- 1 Tbl smoked paprika
- 1 tsp garlic powder
- 16 oz firm tofu, squeezed and crushed
- 1 Tbl ground flax
- 2 Tbl nutritional yeast
Preparation
Preheat the waffle maker
Mix all ingredients together by hand, squeezing the tofu to combine
Mound the mixture onto an oiled waffle maker
Cook for 10-12 minutes
Serve immediately or keep warm in a 200°F oven until ready
