Potato and Tofu Waffles

Ingredients

  • 1 russet potato, shredded
  • 1 small yellow onion, diced
  • 1/4 cup diced pepper
  • 1/4 cup chopped green onion tops
  • 1 tsp kosher salt
  • 1 Tbl smoked paprika
  • 1 tsp garlic powder
  • 16 oz firm tofu, squeezed and crushed
  • 1 Tbl ground flax
  • 2 Tbl nutritional yeast

Preparation

  1. Preheat the waffle maker

  2. Mix all ingredients together by hand, squeezing the tofu to combine

  3. Mound the mixture onto an oiled waffle maker

  4. Cook for 10-12 minutes

  5. Serve immediately or keep warm in a 200°F oven until ready
