Savory Potato Hash Brown Waffles
Ingredients
- 2 yukon potatoes
- 1 flax egg
- salt & pepper to taste
- 2 tbsp vegan butter
- garlic powder to taste
- cayenne powder for spice ? (optional)
Preparation
Peel and shred your potatoes
Add them to a mixing bowl
Make your flax egg by mixing 1 tbsp flax meal with 3 tbsp water and allow to sit for a few minutes
Meanwhile season potato shreds and melt your vegan butter
Add flax egg to mixing bowl and combine/mix everything together
Turn waffle iron on high and brush butter on both sides
When it is hot enough add about 1/2 cup potato shred mix to waffle iron and close
Cook for 5 minutes on each side or more if you want it crispier
Serve along with scrambled tofu or just egg, and avocado for a savory brunch! ?
