Savory Potato Hash Brown Waffles

Ingredients

  • 2 yukon potatoes
  • 1 flax egg
  • salt & pepper to taste
  • 2 tbsp vegan butter
  • garlic powder to taste
  • cayenne powder for spice ? (optional)

Preparation

  1. Peel and shred your potatoes

  2. Add them to a mixing bowl

  3. Make your flax egg by mixing 1 tbsp flax meal with 3 tbsp water and allow to sit for a few minutes

  4. Meanwhile season potato shreds and melt your vegan butter

  5. Add flax egg to mixing bowl and combine/mix everything together

  6. Turn waffle iron on high and brush butter on both sides

  7. When it is hot enough add about 1/2 cup potato shred mix to waffle iron and close

  8. Cook for 5 minutes on each side or more if you want it crispier

  9. Serve along with scrambled tofu or just egg, and avocado for a savory brunch! ?
