Savory Sweet Potato Hash Brown Waffles

Ingredients

  • 2 sweet potatoes
  • 1 flax egg
  • Salt & pepper to taste
  • 2 Tbsp vegan butter
  • Garlic powder to taste

Preparation

  1. Peel and shred your sweet potatoes. Add them to a mixing bowl.

  2. Make your flax egg by mixing 1 Tbsp Flax Meal with 3 Tbsp water and allow to sit for a few minutes.

  3. Meanwhile season sweet potato shreds and melt your vegan butter.

  4. Add flax egg to mixing bowl and combine/mix everything together.

  5. Turn waffle iron on and brush butter on both sides. Add about 1/2 sweet potato shred mix to waffle iron and close.

  6. Cook for 5 minutes on each side or more if you want it crispier. Serve along with scrambled tofu and avocado for a savory brunch!

  7. If you don’t have a waffle iron you can also use a pan
