Quick and Easy Microwave Lemon Cake

Ingredients

  • 1 tbsp. coconut oil/ghee/or butter
  • 1 egg
  • Juice from half a lemon
  • Zest from half a lemon
  • 1 tbsp. agave/pure maple syrup
  • 1/4 tsp. baking powder
  • 3 tbsp. almond flour
  • 2 tbsp. coconut flour

Preparation

  1. In a microwaveable mug or bowl, melt the coconut oil/ghee/or butter.

  2. Let it cool for a few seconds then use a fork to whisk in the egg, lemon juice, lemon zest, and agave/maple syrup.

  3. Stir in the dry ingredients.

  4. Microwave for 2 minutes.
