Quick and Easy Microwave Lemon Cake
Ingredients
- 1 tbsp. coconut oil/ghee/or butter
- 1 egg
- Juice from half a lemon
- Zest from half a lemon
- 1 tbsp. agave/pure maple syrup
- 1/4 tsp. baking powder
- 3 tbsp. almond flour
- 2 tbsp. coconut flour
Preparation
In a microwaveable mug or bowl, melt the coconut oil/ghee/or butter.
Let it cool for a few seconds then use a fork to whisk in the egg, lemon juice, lemon zest, and agave/maple syrup.
Stir in the dry ingredients.
Microwave for 2 minutes.
