Quick Penne Pasta with Sun-Dried Tomatoes, Olives, and Pesto
Ingredients
- Penne pasta
- Ready Pasta from @vettapasta
- 2 tbsp olive oil
- Sun-dried tomatoes
- Green olives
- Pine nuts
- Basil leaves
- Chopped green pepper
- 2 tbsp cashews
- 3 tbsp extra-virgin olive oil
- 1 tbsp nutritional yeast
Preparation
Cook the penne pasta according to package instructions. Drain and set aside.
In a pan, add @vettapasta Ready Pasta and 2 tbsp olive oil. Stir and cook for 2-4 minutes.
To serve, add sun-dried tomatoes, green olives, and pesto to the pan with the cooked pasta. Toss to combine.
Sprinkle the dish with pine nuts.
