Quick Penne Pasta with Sun-Dried Tomatoes, Olives, and Pesto

Ingredients

  • Penne pasta
  • Ready Pasta from @vettapasta
  • 2 tbsp olive oil
  • Sun-dried tomatoes
  • Green olives
  • Pine nuts
  • Basil leaves
  • Chopped green pepper
  • 2 tbsp cashews
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp nutritional yeast

Preparation

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a pan, add @vettapasta Ready Pasta and 2 tbsp olive oil. Stir and cook for 2-4 minutes.

  3. To serve, add sun-dried tomatoes, green olives, and pesto to the pan with the cooked pasta. Toss to combine.

  4. Sprinkle the dish with pine nuts.

  5. Enjoy the penne pasta with sun-dried tomatoes, olives, and pesto immediately.
