Raw Cauliflower #

Ingredients

  • 1/2 cauliflower, stalk removed
  • 1/2 lemon, juiced
  • 1 avocado (pureed)
  • 1/4 yellow onion, finely grated or finely chopped
  • 1 big handful of parsley and mint, finely chopped
  • 1/2 cucumber, finely diced
  • 1 tomato, finely diced
  • pinch of salt and pepper

Preparation

  1. Put the cauliflower florets into a food processor - pulse until it reaches a couscous-like texture

  2. Combine cauliflower with the rest of the ingredients

  3. Season well, adding more lemon, salt and pepper to taste
