Saudi Kabsa

Ingredients

  • 1-2 cups potatoes, cut into large cubes
  • 1/2 cup carrots, cut into large pieces
  • 2 cups onions, cut into small pieces
  • 1 and a half cups brown rice, washed and soaked for an hour
  • 2 tablespoons tomato paste
  • 1 cup tomatoes, cut into small pieces
  • 1/3 cup parsley
  • 2 hot peppers (optional, to taste)
  • 2 tablespoons kabsa spices (or Bahraini spices)
  • 1 tablespoon biryani spice
  • 1 tablespoon curry powder
  • 2 cardamom pods
  • 2 cloves
  • 1/3 cup pomegranate molasses
  • Salt and pepper

Preparation

  1. Fry the onions until they turn brown (important step).

  2. Add the potatoes and onions and stir for a minute.

  3. Add tomato paste and small tomato pieces, and stir until the oil separates.

  4. Add the pomegranate molasses and all the remaining spices, and stir from time to time until the sauce is homogeneous and the potatoes are cooked (10-15 minutes).

  5. Add the rice and add enough hot water to cover the surface of the rice.

  6. Cover the pot and let it cook on low heat until the rice is cooked. Enjoy!

  7. Serve with salad and spicy tomato sauce.
