Savory Sausage & Bacon Pancakes with Maple Syrup

Ingredients

  • 1 cup wholemeal flour (or gluten-free)
  • 1 cup plant milk (soya unsweetened)
  • Pinch of pink/sea salt
  • 1 tsp baking powder
  • 2 cooked sausages
  • Cooked 'bacon'
  • Maple syrup

Preparation

  1. Mix together the wholemeal flour, salt, baking powder, and plant milk to create a batter. Set aside.

  2. Slice the cooked sausages and 'bacon'.

  3. Heat a little oil in a non-stick frying pan.

  4. Pour 3 tbsp of the batter into the pan and top with slices of cooked sausage and 'bacon'.

  5. Fry on medium heat for 2-3 minutes until golden.

  6. Flip the pancake and cook the other side until golden.

  7. Serve the savory pancakes with fruit and a drizzle of maple syrup.
