Savory Sausage & Bacon Pancakes with Maple Syrup
Ingredients
- 1 cup wholemeal flour (or gluten-free)
- 1 cup plant milk (soya unsweetened)
- Pinch of pink/sea salt
- 1 tsp baking powder
- 2 cooked sausages
- Cooked 'bacon'
- Maple syrup
Preparation
Mix together the wholemeal flour, salt, baking powder, and plant milk to create a batter. Set aside.
Slice the cooked sausages and 'bacon'.
Heat a little oil in a non-stick frying pan.
Pour 3 tbsp of the batter into the pan and top with slices of cooked sausage and 'bacon'.
Fry on medium heat for 2-3 minutes until golden.
Flip the pancake and cook the other side until golden.
Serve the savory pancakes with fruit and a drizzle of maple syrup.
