Sesame Crusted Tofu Nourish Bowl
Ingredients
Sesame tofu
- 120 grams firm tofu
- 1 tbsp (20g) smooth natural peanut butter
- 1 tbsp coconut aminos or light soy sauce
- 1 tsp fresh lime juice
- 1 1/2 tbsp unsweetened almond milk
- 1 1/2 tbsp sesame seeds
Nourish bowl
- 2 cups lettuce (shredded)
- 1 cup purple cabbage (shredded)
- 1 carrot (grated)
- 1 medium cucumber
- 1/4 red capsicum
- 1/2 avocado
- 2 tbsp corn
- Sprinkle of alfalfa sprouts to garnish
Preparation
Chop all vegetables for the nourish bowls and place them to the side.
Mix together smooth natural peanut butter, coconut aminos or soy sauce, lime juice, and almond milk in a small bowl until well combined to create the peanut sauce.
Cut tofu into cubes and coat thoroughly in the peanut sauce.
Lay out sesame seeds on a plate or flat surface, place the marinated tofu onto the seeds, and press down on all sides to coat, repeating for all pieces.
Cook the tofu in a non-stick fry pan for 3 minutes on medium heat, then flip and cook for another 3 minutes.
Assemble the nourish bowls by dividing lettuce, purple cabbage, shredded carrot, cucumber, and red capsicum into each bowl.
Add the sesame crusted tofu to the bowls and top with avocado and a sprinkling of alfalfa sprouts.
