Easy Vegan Poke Bowl

Ingredients

  • 1 bunch lacinto kale, chopped
  • 1/2 red mango, cubed
  • 2 TBSP quick pickled onions
  • 1/2 cup jade pearl rice, cooked according to package
  • 1/2 cup shelled edamame
  • 1 TBSP pickled ginger
  • 1/2 cup red cabbage, finely chopped
  • 1 English cucumber, spiralized
  • 1 radish, sliced
  • sesame seeds
  • cilantro

Poké sauce

  • 1/3 cup almond milk greek yogurt (or yogurt of choice)
  • 1 TBSP plant based mayonnaise
  • 1-2 TBSP sriracha (adjust for spice preference)
  • 1 tsp coconut aminos (or soy sauce)
  • 1/2 tsp raw agave (or maple)
  • squeeze of lime

Preparation

  1. Prepare the poké sauce by mixing all sauce ingredients together in a bowl.

  2. Massage the kale with 1 TBSP lemon juice and 1 tsp EVOO until tender, then place in serving bowls.

  3. Top with mango, pickled onions, rice, edamame, pickled ginger, red cabbage, cucumber, radish, sesame seeds, and cilantro.

  4. Drizzle with the poké sauce and add an extra squeeze of lime if desired.
