Spicy Coconut Curry with Rice

Ingredients

  • oil
  • garlic powder
  • chilli flakes
  • salt
  • pepper and jerk seasoning
  • red pepper
  • mushrooms
  • 1 green chilli
  • 1tsp garam masala
  • 1/2 tsp of vegan chicken seasoning
  • broccoli
  • coconut milk
  • butternut squash
  • spinach

Preparation

  1. Before I started my curry, I popped butternut squash in the oven covered with oil, garlic powder, chilli flakes, salt, pepper and jerk seasoning

  2. I fried one white onion in oil and a pinch of salt for about 3 mins

  3. Then I added red pepper, mushrooms and fried for a further 3ish mins

  4. Then I added some garlic and 1 green chilli and fried for 1 min

  5. After that, I added a tablespoon of curry powder, 1tsp of mixed herbs, 1tsp garam masala and 1/2 tsp of vegan chicken seasoning

  6. Then I added half a pint of veg stock and simmered for about 5 mins

  7. Then I added a can of rinsed chickpeas and half a head of broccoli and cook for 5 mins

  8. Season at this stage

  9. Add half a can of coconut milk and cooked for about 5 mins and add cooked butternut squash

  10. Add a couple of handfuls of spinach and season

  11. I left the curry off the heat for a few mins to thicken but you could always add a mix of cornstarch and water if you like it thicc
