Sriracha Tofu

Ingredients

  • 2 tsp sriracha
  • 1 tbsp soy sauce
  • 1 tbsp nutritional yeast
  • juice of half a lime
  • curry ramen noodles
  • 2 blocks rice ramen noodles
  • 2 tsp soy sauce
  • 1 tsp thai curry paste
  • 1 tsp sriracha
  • juice of half a lime
  • salt to taste

Preparation

  1. Cook noodles according to package

  2. Drain noodles and rinse under cold water

  3. Set aside in a bowl

  4. In pan used to cook noodles, add coconut milk and curry paste

  5. Sauté for about 1-2 minutes or until fragrant

  6. Add noodles, soy sauce and sriracha and sauté to coat evenly

  7. Remove from heat and add lime juice

  8. Adjust salt to preference and serve
