Strawberry Chia Jam-Filled Pop-Tart Cookies
Ingredients
- 1 3/4 cups all-purpose flour (gluten-free baking flour can be used)
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/2 cup almond milk
- 1 egg
- 1/2 cup mashed strawberries
- 2 tbsp chia seeds
Preparation
Preheat the oven to 350°F (175°C).
In a small bowl, whisk together the egg and almond milk.
In a large bowl, whisk together the flour, coconut sugar, and baking powder.
Pour the wet ingredients into the dry ingredients and stir until well combined.
If making homemade jam, mix the mashed strawberries and chia seeds in a bowl and let it sit for at least 5 minutes.
Roll the dough into 13 cookies or use a cookie scoop. Slightly flatten each cookie.
Add a spoonful of strawberry chia jam to the center of each cookie.
Fold the cookies over to encase the jam and seal the edges.
Place the cookies on a baking sheet and bake for 8 minutes.
Once baked, remove from the oven and let cool before serving.
