Summertime Spanish-Style Waffles
Ingredients
- 300g cherry tomatoes
- olive oil
- salt and pepper
- 200g chickpea flour + 2 tsp baking powder
- 1 pouch (250g) Spanish-Style Grains
- coconut yoghurt
- roasted tomatoes and sliced avocado
- green/herbs and seeds
Preparation
Add 300g cherry tomatoes to a line baking tray, drizzle with olive oil, salt and pepper. Roast for 15 mins at 160Fan/180*C until juicy
Stir 200g chickpea flour + 2 tsp baking powder. Whisk in 300ml room temperature water to a thick batter. Leave for 5-10 mins then stir in 1 pouch (250g) Spanish-Style Grains
Preheat and grease the waffle iron. Add 1/4 of the batter for each waffle. Cook until golden and fluffy
Serve warm or cold with some coconut yoghurt, roasted tomatoes and sliced avocado. Top with green/herbs and seeds, if you like
