Summertime Spanish-Style Waffles

Ingredients

  • 300g cherry tomatoes
  • olive oil
  • salt and pepper
  • 200g chickpea flour + 2 tsp baking powder
  • 1 pouch (250g) Spanish-Style Grains
  • coconut yoghurt
  • roasted tomatoes and sliced avocado
  • green/herbs and seeds

Preparation

  1. Add 300g cherry tomatoes to a line baking tray, drizzle with olive oil, salt and pepper. Roast for 15 mins at 160Fan/180*C until juicy

  2. Stir 200g chickpea flour + 2 tsp baking powder. Whisk in 300ml room temperature water to a thick batter. Leave for 5-10 mins then stir in 1 pouch (250g) Spanish-Style Grains

  3. Preheat and grease the waffle iron. Add 1/4 of the batter for each waffle. Cook until golden and fluffy

  4. Serve warm or cold with some coconut yoghurt, roasted tomatoes and sliced avocado. Top with green/herbs and seeds, if you like
