Ingredients

  • 1-eggs (source of protein)
  • 2-ready cooked beetroot cut in round slices (rich in folic acid, fibre, manganese &potassium) - they're hidden inside the omelette
  • 3-kale (vitamins K, A & C and calcium which is great for vegetarians)
  • 4- shiitake mushrooms roughly sliced (copper, amino and fatty acids)
  • 5-spoonful of chopped red onion and tspn of chopped garlic roughly fried in some coconut oil
  • 6-Himalayan salt, pepper and chillis for the more adventurous
