Sweet and Savory Cauliflower Bites Two Ways
Ingredients
For Easier Cauliflower Bites
- 1 medium head of cauliflower, cut into golf ball size pieces
- 3 tbsp flour
- 1 tbsp cornstarch
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 tbsp unsweetened soy or almond milk
For Breading
- 1/2 to 3/4 cup bread crumbs
- 2 tbsp nutritional yeast
- 1/4 tsp salt
For Sweet & Spicy Sauce (double for a whole head of cauliflower)
- 2 tbsp soy sauce
- 2 tbsp maple syrup
- 2 tsp mirin
- 1 tbsp sriracha
- 1 tbsp ketchup
For Buffalo Sauce (use more if making a whole head of cauliflower)
- 1/2 cup Frank's Red Hot Buffalo Sauce
Preparation
Preheat the oven to 425°F.
In a large bowl, combine flour, cornstarch, Italian seasoning, garlic powder, salt, and pepper. Whisk in the unsweetened soy or almond milk to form a batter.
Add the cauliflower pieces to the bowl and use a spatula to coat each piece evenly with the batter.
Sprinkle half of the bread crumbs, nutritional yeast, and salt over the cauliflower, and toss again to coat. Sprinkle the remaining breading ingredients and toss until the cauliflower is completely coated.
Spread the coated cauliflower bites out on a lined baking sheet, ensuring they are not touching.
Bake in the preheated oven for 25 minutes.
While the cauliflower bakes, prepare the sauces. For the Sweet & Spicy Sauce, mix soy sauce, maple syrup, mirin, sriracha, and ketchup in a bowl. For the Buffalo Sauce, use Frank's Red Hot Buffalo Sauce.
After 25 minutes, remove the cauliflower from the oven and allow it to cool slightly.
Dip the cauliflower pieces into the sauces to coat them, then place them back onto the baking sheet.
Bake for an additional 10 minutes to crisp up the cauliflower.
Remove from the oven and let them cool slightly before serving.
