Sweet Potato and Red Lentil Coconut Curry
Ingredients
- 2 tablespoons olive oil
- 1/2 white onion, diced
- 1 tablespoon grated ginger
- 1 tablespoon grated garlic (about 3 cloves)
- 1 teaspoon curry powder
- 2 tablespoons tomato paste
- 2 tablespoons red curry paste
- 4 cups cubed sweet potato (2 medium)
- 3/4 cup red lentils
- 1 (14.5 oz) can lite coconut milk (or full fat)
- 1 1/2 cups vegetable broth (or water)
- Salt & pepper to taste
- Cauliflower rice to serve
- Cilantro for garnish
Preparation
Heat the olive oil in a large pot over medium heat
Sauté the diced onion until softened, about 5 minutes
Add the grated ginger and garlic, and cook for 1 minute until fragrant
Stir in the curry powder, tomato paste, and red curry paste
Add the cubed sweet potatoes, red lentils, coconut milk, and vegetable broth
Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the sweet potatoes and lentils are tender
Season with salt and pepper to taste
Serve over cauliflower rice and garnish with cilantro
