Sweet Potato and Red Lentil Coconut Curry

Ingredients

  • 2 tablespoons olive oil
  • 1/2 white onion, diced
  • 1 tablespoon grated ginger
  • 1 tablespoon grated garlic (about 3 cloves)
  • 1 teaspoon curry powder
  • 2 tablespoons tomato paste
  • 2 tablespoons red curry paste
  • 4 cups cubed sweet potato (2 medium)
  • 3/4 cup red lentils
  • 1 (14.5 oz) can lite coconut milk (or full fat)
  • 1 1/2 cups vegetable broth (or water)
  • Salt & pepper to taste
  • Cauliflower rice to serve
  • Cilantro for garnish

Preparation

  1. Heat the olive oil in a large pot over medium heat

  2. Sauté the diced onion until softened, about 5 minutes

  3. Add the grated ginger and garlic, and cook for 1 minute until fragrant

  4. Stir in the curry powder, tomato paste, and red curry paste

  5. Add the cubed sweet potatoes, red lentils, coconut milk, and vegetable broth

  6. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the sweet potatoes and lentils are tender

  7. Season with salt and pepper to taste

  8. Serve over cauliflower rice and garnish with cilantro
