Sweet Potato, Chickpea, and Spinach Stew

Ingredients

  • 2 sweet potatoes
  • 1 can of chickpeas
  • 1 bag of spinach
  • 1 tin of chopped tomatoes (400g)
  • 1 tablespoon tomato puree
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • 1 red onion
  • 2 garlic cloves
  • salt and pepper

Preparation

  1. Heat some olive oil in a saucepan, fry the garlic and onion then add the spices and the sweet potatoes (peeled and chopped) and cook for a few minutes

  2. Add the chickpeas, the chopped tomatoes and tomato puree

  3. Let simmer at medium temperature and stir occasionally

  4. Once the sweet potatoes are soft, about 15 minutes, add the spinach, stir to combine everything and keep cooking for a few more minutes
