Tomato Soup


  • 4 tbs of olive oil
  • 8 cloves of minced garlic
  • 4 cups of chopped vine ripe tomatoes
  • 2 tsps of dried basil
  • 2 sprigs of thyme
  • 3/4 tsp of pink himalayan salt
  • 1/2 tsp of black pepper
  • 1/2 tsp of dried oregano


  1. In a large pot on medium heat add olive oil, garlic, and herbs, cook for about 1 minute

  2. Next add tomatoes and seasoning and stir well

  3. Lower heat to medium-low and allow to simmer for 30 minutes stirring occasionally

  4. Once time is up remove from heat (we served ours in a bread bowl), garnish with fresh thyme and enjoy????
