Turkish Lentil Soup

Ingredients

  • cook the red lentils with one medium potato, 2/3 carrots depending on the size and 1/2 Spanish onion
  • Once the lentils are cooked get rid of the liquid and pure everything. Then cook it in vegetable stock until you get the consistency you want. I like my soup thick. Add salt and dry mint. Yes !!! That's the secret ingredient
  • That's it !!! Serve it with a little bit more dry mint and Turkish red pepper, if you don't have it just use red chili powder. Squeeze a little bit of lemon on top. I made a quick kale salad and a grilled cheese to go along with
