Vanilla Cashew Cream


  • 1 cup raw cashews soaked for 2 hours ??1/4 - 1/2 cup filtered water depending on how thick you want the cream
  • 1 - 2 tbsp of sweetener of choice - maple syrup or coconut nectar, etc
  • 1/2 - 1 tsp natural vanilla extract or vanilla beans
  • pinch of Celtic or Himalayan salt


  1. Throw everything into the blender and blast on high until thick and creamy

  2. It is a good idea to start with 1/4 cup of water, and then gradually thin it out in order to achieve the desired thickness

  3. TIP: you will need a high speed blender in order to achieve a really creamy consistency

  4. With a conventional blender, you must soak the cashews by covering with room temperature water for about 4 hours
