Vegan Chocolate Mousse with Cashews and Chia
Ingredients
- 1 cup cashews
- 1 cup almond milk
- 2 tbsp chia seeds
- 3 tbsp cacao powder
- 2 tbsp maple syrup
- 1/4 tsp vanilla essence
- pinch of Himalayan pink rock salt
Toppings
- desiccated coconut
- buckinis
- berries
- chopped up dark chocolate
Preparation
Blend all the ingredients together until smooth.
Top with desired toppings such as desiccated coconut, buckinis, berries, or chopped dark chocolate.
Refrigerate to firm up or serve immediately.
Store in the fridge for up to 2 days.
