Vegan Coconut Macaroons

Ingredients

  • 1 cup desiccated coconut
  • 3/4 cup almond flour (or ground almonds)
  • 1/4 cup maple syrup
  • 3 tbsp melted coconut oil (measure from liquid)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Dark chocolate

Preparation

  1. Preheat your oven to 150ºC.

  2. Mix everything except the chocolate together and put it in the fridge for about 10 minutes to harden, making it easier to mold.

  3. Shape the mixture into balls (you can use an ice cream scooper to make them uniform) and bake for 22 minutes.

  4. Allow the macaroons to cool completely, then drizzle or dip them with dark chocolate.

  5. Place them in the fridge for 10 minutes until the chocolate has hardened. Enjoy!
