Vegan Pasta Recipes for the Week
Ingredients
- 2 cups whole wheat penne, dry
- 1/4 white onion, diced
- 4 cloves garlic, diced
- 1/4 cup tomato paste
- 1 tsp vodka
- 1/2 cup unsweetened almond milk
- 3 tbsp coconut milk, full fat
- 1 tsp red pepper flakes (or more for preference)
- 1/4 cup reserved pasta water
- 1/2 tsp salt, to taste
- 1 handful spinach or basil
- 3 tbsp nutritional yeast
Preparation
Cook the pasta according to package directions, reserving 1/4 cup of pasta water before draining.
In a pan over medium heat, sauté the diced onion and garlic until translucent, about 3 minutes.
Add the tomato paste and stir, then add the vodka, almond milk, and coconut cream. Mix until a sauce forms, then add the red chili flakes, salt, and pepper.
Pour in the reserved pasta water and cooked penne to the pan. Stir until the pasta is coated, and add a handful of spinach or fresh basil at the end.
Serve with nutritional yeast and more salt and pepper if desired.
