Vegan Pumpkin Pancakes

Ingredients

  • 2 tbl ground golden flax
  • 4 tbl water
  • 2 cups ap flour
  • 1 tbl baking powder
  • 1 tsp salt
  • 1 tbl pumpkin pie spice
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 2 tbl avocado oil
  • 1 1/2 cups @theoatyeah

Preparation

  1. Mix the ground flax and water

  2. Set aside

  3. Whisk the dry ingredients

  4. In a measuring cup whisk the milk, vanilla, pumpkin puree, and oil

  5. Fold the wet into the dry until nearly all dry is incorporated

  6. Fold the soaked flax in into no dry clumps remain

  7. The batter should be thick but still a little runny

  8. Add more milk if it clumps off the spatula instead of runs off slightly

  9. Measure out 1/4 cup batter onto a lightly oiled griddle or pan

  10. Cook until the top starts to bubble and the sides look cooked, about 3 min

  11. Flip and cook for 2 min more

  12. Serve with a dollop of whipped coconut cream, a dust of pumpkin pie spice or cinnamon, and some pecans

  13. Also delicious with powdered sugar or maple syrup
