Vegan Quesadillas

Ingredients

  • 1-2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1/3 red onion, diced
  • 1/3 white onion, diced
  • 1 jalapeno, seeded and diced (optional for extra spicy)
  • 1 red bell pepper, quartered
  • 80g mushrooms
  • 1-2 small zucchinis, quartered
  • 100g sweet corn
  • 1/4 teaspoon cumin
  • salt and pepper, to taste
  • 3-4 large whole wheat tortillas
  • 1/2 cup vegan cheese

Preparation

  1. First, sauté the garlic, onions, mushrooms, zucchini, bell pepper and the corn with a bit of oil at least until the onions become translucent

  2. Next, stir in the spices like cumin, salt, pepper to taste

  3. Remove from the stove and place aside

  4. In a separate or the same pan, use again a bit of oil and place a whole wheat tortilla in it while covering the tortilla with some vegan cheese, cook until the cheese is melted

  5. Now, just put the sauté mixture on top of the cheese tortilla and cover everything with another tortilla (the tortilla should be Gesten up first as well)

  6. Repeat the process for as much mixture you have still left with other tortillas

  7. Cut into evenly slices and simply enjoy this
