Vegan Ragu
Ingredients
- 2 cups of red lentils
- 3 spiralized zucchinis
- 2 tbs of olive oil
- 1 clove of minced garlic
- 1/2 cup of chopped yellow onion
- 3/4 cup of chopped carrots
- 1/2 cup of chopped celery
- 2 tbs of balsamic vinegar
- 1/4 cup of tomato paste
- 3/8 tsp of thyme
- 1/4 tsp of rosemary
- 1 cup of shredded crimini mushrooms
- 1/2 cup of chopped tomatoes
- 3/4 tsp of pink himalayan salt
- 1/2 tsp of black pepper
- 1 tbs of chopped parsley
Preparation
In a large pot cook lentils according to directions
Set aside when finished
In a large pan on medium heat add olive oil, garlic, and onion
Cook until fragrant and add carrots and celery, cook for 5 minutes or until carrots are tender
Next add balsamic vinegar, tomato paste, thyme and rosemary
Stir for 1 to 2 minutes and add mushrooms along with cooked lentils
Stir well until all components are well combined
Add salt and pepper along with parsley and stir
Serve over spiralized zucchinis and garnish with nutritional yeast flakes and enjoy ???? #threebunnies
