Vegan Strawberry Tart with Agar Agar
Ingredients
Crust
- 10 pieces of digestive biscuits
- 3 tbsp melted butter
- 2 tbsp water
- 1 tbsp agave syrup
Filling
- 6 dl fresh strawberries
- 4 dl whip cream (soy-based, e.g., @alpro)
- 1 dl sugar
- Juice from 1/2 lemon
- 1 tsp agar agar
Preparation
Prepare the Crust
Blend all crust ingredients in a food processor until a crust forms.
Press the crust mixture into a tart form.
Bake in the oven at 200 degrees Celsius for 8 minutes.
Allow the crust to cool after baking.
Make the Filling
Process the fresh strawberries in a food processor until smooth.
Strain out the seeds using a nut milk bag or similar.
In a pot, combine the strawberry liquid, soy whip cream, sugar, and lemon juice.
Heat the mixture on high heat on the stove.
When the mixture boils, add agar agar and whisk for 3-4 minutes.
Pour the filling into the cooled crust.
Set and Decorate
Refrigerate the tart overnight to allow it to set.
Decorate the tart with strawberries and soy whip cream before serving.
