Vegan Strawberry Tart with Agar Agar

Ingredients

Crust

  • 10 pieces of digestive biscuits
  • 3 tbsp melted butter
  • 2 tbsp water
  • 1 tbsp agave syrup

Filling

  • 6 dl fresh strawberries
  • 4 dl whip cream (soy-based, e.g., @alpro)
  • 1 dl sugar
  • Juice from 1/2 lemon
  • 1 tsp agar agar

Preparation

Prepare the Crust

  1. Blend all crust ingredients in a food processor until a crust forms.

  2. Press the crust mixture into a tart form.

  3. Bake in the oven at 200 degrees Celsius for 8 minutes.

  4. Allow the crust to cool after baking.

Make the Filling

  1. Process the fresh strawberries in a food processor until smooth.

  2. Strain out the seeds using a nut milk bag or similar.

  3. In a pot, combine the strawberry liquid, soy whip cream, sugar, and lemon juice.

  4. Heat the mixture on high heat on the stove.

  5. When the mixture boils, add agar agar and whisk for 3-4 minutes.

  6. Pour the filling into the cooled crust.

Set and Decorate

  1. Refrigerate the tart overnight to allow it to set.

  2. Decorate the tart with strawberries and soy whip cream before serving.
