Zucchini Paleo Bread with Olives and Tomatoes

Ingredients

  • 1 1/2c almond meal
  • 3/4c arrowroot
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 5 eggs
  • 1 1/2 tsp apple cider vinegar
  • 1/3c pitted olives (sliced)
  • 3/4c grated zucchini
  • 1/3c sundried tomatoes

Preparation

  1. Mix all of the dry ingredients together

  2. In a different bowl, mix the eggs and all other ingredients

  3. Combine the ingredients, mix well, and pour into a loaf tin

  4. Sprinkle pumpkin seeds on top and bake in the oven for 35 minutes at 320 degrees

  5. Cool for 5 minutes and enjoy
