Zucchini Paleo Bread with Olives and Tomatoes
Ingredients
- 1 1/2c almond meal
- 3/4c arrowroot
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 5 eggs
- 1 1/2 tsp apple cider vinegar
- 1/3c pitted olives (sliced)
- 3/4c grated zucchini
- 1/3c sundried tomatoes
Preparation
Mix all of the dry ingredients together
In a different bowl, mix the eggs and all other ingredients
Combine the ingredients, mix well, and pour into a loaf tin
Sprinkle pumpkin seeds on top and bake in the oven for 35 minutes at 320 degrees
Cool for 5 minutes and enjoy
