Crispy Chicken Lunch Salad
Ingredients
- 3/4 lb chicken tenders
- 1 egg
- 1/2 cup almond flour
- 1 heaping tbsp Trader Joe's 21 Seasoning Salute
Preparation
Preheat the oven to 400 degrees Fahrenheit.
Whisk the egg in a shallow bowl.
In another shallow bowl, combine the almond flour and Trader Joe's 21 Seasoning Salute.
Dip each chicken tender into the whisked egg, ensuring it is coated evenly.
Next, coat the chicken tender in the almond flour and spice mixture, pressing it onto the chicken to adhere.
Place a cooling rack on top of a baking sheet and spray it with oil to prevent sticking.
Arrange the coated chicken tenders on the prepared baking sheet.
Bake in the preheated oven for 18-20 minutes, or until the chicken is cooked through and golden brown.
For extra crispiness, broil the chicken tenders for 1-2 minutes at the end of the baking time.
Remove from the oven and let the chicken tenders cool slightly.
Slice the crispy chicken tenders and serve them on top of your favorite lunch salad.
