Instant Pot Lentil Chili - Hearty and Delicious Vegetarian Dish

Ingredients

  • 1 cup brown lentils, rinsed
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 1 cup corn
  • 1 28 oz can crushed tomatoes
  • 3.5 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp cayenne (optional)
  • Salt and pepper

Optional Toppings

  • Avocado
  • Shredded cheese
  • Green onion
  • Cilantro

Preparation

  1. Set the Instant Pot to "Saute" mode. Once hot, add a splash of olive oil and the diced onions. Saute for 3 minutes.

  2. Add the diced bell pepper, diced jalapeno, and minced garlic. Stir and cook for another 1 minute.

  3. Add the chili powder, cumin, paprika, onion powder, cayenne (if using), salt, and pepper. Stir to combine.

  4. Press the "Cancel" button and add the corn, crushed tomatoes, vegetable broth, and brown lentils.

  5. Close the Instant Pot lid and set it to "Pressure Cook" mode for 30 minutes. Allow for natural release for 10 minutes.

  6. Serve the lentil chili topped with avocado, shredded cheese, green onion, and/or cilantro.
