Quick Vegan Pancakes with Berries and Coconut
Ingredients
- 2 tbsp flour (buckwheat or any other)
- 2 tbsp grated coconut
- 1 tsp crushed flax seeds
- 1/4 cup almond milk
- 1 tsp stevia (e.g., @goodgoodbrand)

Preparation
In a mixing bowl, combine the flour, grated coconut, and crushed flax seeds.
Gradually add almond milk to the dry ingredients and whisk until you have a smooth batter.
Stir in the stevia for sweetness.
Heat a non-stick skillet or frying pan over medium heat.
Once the pan is hot, ladle a portion of the batter onto the pan to form a pancake. You can make one or more pancakes depending on the size of your pan.
Cook until small bubbles form on the surface of the pancake and the edges look set.
Carefully flip the pancake and cook for an additional 1-2 minutes until golden brown on both sides.
Repeat the process with the remaining batter, adding more oil to the pan as needed.
Serve the pancakes with a dollop of yogurt, a handful of fresh berries, a drizzle of peanut butter, chia seeds, and a splash of sugar-free maple syrup.
