Easy High Protein Black Bean (Crock Pot) Soup

Ingredients

  • 1 pound dried black beans, rinsed and drained
  • 1 medium onion, diced
  • 3 - 4 cups of diced tomatoes
  • 4 cups vegetable broth or water
  • 2 cloves garlic, minced
  • 1 tsp cumin ??OPTIONAL SPICY
  • 1 medium jalapeno pepper, deseeded and diced
  • 1/2 tsp red pepper flakes or cayenne pepper

Preparation

  1. Add all of the ingredients to the slow cooker and set the timer for 8 hours on low

  2. Check that the beans are tender and cook an additional 30 minutes until they reach the desired tenderness
