Easy High Protein Black Bean Crock Pot Soup
Ingredients
- 1 pound dried black beans, rinsed and drained
- 1 medium onion, diced
- 3 - 4 cups of diced tomatoes
- 4 cups vegetable broth or water
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 medium jalapeno pepper, deseeded and diced (optional)
- 1/2 tsp red pepper flakes or cayenne pepper (optional)
Preparation
Add all of the ingredients to the slow cooker and set the timer for 8 hours on low.
Check that the beans are tender and cook an additional 30 minutes until they reach the desired tenderness.
