Green Shakshuka
Ingredients
- 1 red onion - sliced
- 1 250gm bag chopped kale
- 1 clove garlic
- 1 tspn olive oil
- 4 eggs ? - poached
- Pumpkin ? seeds & chilli ? to sprinkle on top
Preparation
Saute the red onion in the olive oil, add the kale and a teaspoon of water ? cook until soft
Make 4 wells in the kale and add the poached eggs. Sprinkle with seeds, chilli and feta. Enjoy with some crusty sourdough to dip in
