Green Shakshuka

Ingredients

  • 1 red onion - sliced
  • 1 250gm bag chopped kale
  • 1 clove garlic
  • 1 tspn olive oil
  • 4 eggs ? - poached
  • Pumpkin ? seeds & chilli ? to sprinkle on top

Preparation

  1. Saute the red onion in the olive oil, add the kale and a teaspoon of water ? cook until soft

  2. Make 4 wells in the kale and add the poached eggs. Sprinkle with seeds, chilli and feta. Enjoy with some crusty sourdough to dip in
