Green Shakshuka Breakfast with Eggs and Kale
Ingredients
- 1 sliced red onion
- 1 250g bag chopped kale
- 1 clove garlic
- 1 teaspoon olive oil
- 4 eggs
- Pumpkin seeds and chilli for sprinkling
Preparation
Sauté the red onion in the olive oil.
Add the kale and a teaspoon of water, cook until soft.
Make 4 wells in the kale and add the poached eggs.
Sprinkle with pumpkin seeds, chilli, and feta.
Enjoy with crusty sourdough to dip in.
Tips
For kids who don't like green, make it fun by shaping eggs as eyes and adding a red pepper mouth.
Purée the kale to make it easier for toddlers to eat.
