Homemade Savory Vegan Tofu Scramble

Ingredients

  • Broccoli
  • Onion
  • Mushrooms
  • Garlic
  • 1-2 servings tofu
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 tablespoon plant milk
  • Toast for serving

Preparation

  1. Sauté broccoli, onion and mushrooms with some garlic until soft and onions are translucent.

  2. Crumble 1-2 servings of tofu in your pan and stir/cook for 3 minutes.

  3. Add 1 tablespoon nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon paprika and 1/4 teaspoon salt; stir and cook together for 5 minutes.

  4. Add 1 tablespoon of plant milk and stir/cook for 2 minutes.

  5. Pile the mixture on toast and enjoy!
