Pau Bhaji Fondue

Ingredients

  • 1 red onion - chopped
  • 2 teaspoons minced ginger
  • 2 teaspoons minced garlic (about 6 cloves)
  • 1 tablespoon olive oil
  • 2 green chillies - if you like it spicy ?
  • 1 teaspoon cumin seeds
  • 1 stick cinnamon
  • 5 black cardamoms
  • 3 star anise
  • 1 teaspoon each - ground turmeric, coriander, cumin, garam masala
  • 1/2 teaspoon mango powder
  • Juice of 1 lime (add more to taste)
  • Salt to taste
  • Handful of chopped coriander
  • Wholemeal bread rolls & butter to serve

Preparation

  1. Fry the onion in the oil, add the cinnamon, cardamom, star anise, and cumin seeds

  2. Stir a minute and add the garlic & ginger

  3. Next add all the veggies and the tomato (chopped & purée)

  4. Finally add the salt & spices & coriander

  5. Top up with a little water - just to cover the vegetables and leave to simmer until cooked

  6. Finally pop in a hand blender & pulse the mix so it is lumpy but not soup like

  7. Pan fry the buttered wholemeal rolls and & cut into squares to fondue onto skewers
