Spicy Warm Tempeh Salad

Ingredients

  • 3 tbsp tamari soy sauce or soy sauce
  • 1/2 tsp smoked paprika
  • 2 tsp crushed chillies/hot flakes
  • 450g/1lb tempeh, cut into cubes
  • 1 tbsp olive oil or safflower oil
  • 2 red onions, finely sliced
  • 1 lettuce, leaves chopped
  • 150g/5 1/2 oz baby spinach leaves
  • 1/2 red pepper, deseeded and sliced
  • 60g/2 1/4 oz/1/2 cup pitted, green and black olives, sliced
  • 2 plum or vine tomatoes, cut into thin wedges
  • 2 avocados, cut in half, pitted, peeled and sliced
  • chilli dressing
  • 4 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tbsp ? sauce
  • freshly ground black pepper

Preparation

  1. Put the tamari in a bowl and add smoked paprika and crushed chilli /hot pepper flakes

  2. Add the tempeh and mix well to combine, then leave to one side

  3. Heat the oil in a non- stick frying pan over medium heat

  4. Add the tempeh and cook 5-8 minutes until golden brown

  5. Meanwhile, put the onions in a large serving bowl and add lettuce, spinach, pepper, olives, tomatoes and avocados

  6. Gently mix together, taking care not to mash the avocados

  7. Put all the ingredients for dressing in a screw top jar, cover and shake well to combine

  8. Alternatively, whisk in a small jug

  9. Serve the tempeh with the salad and drizzle it with the dressing
