Sweet Potato & Pumpkin Risotto

Ingredients

  • 500g sweet potato, peeled (about 1 large potato)
  • • 500g jap pumpkin, peeled • 1 cup (180g) brown rice
  • • 1 tbsp paprika powder
  • • 1 tbsp rosemary
  • • 1 tsp cinnamon
  • • 1 tbsp coconut oil (or olive oil)
  • • 3 tbsp apple cider vinegar (recently declared FODMAP friendly! ??) • 2 tbsp nutritional yeast (optional)
  • • 1/2 cup coconut cream
  • • 1 lime
  • • 2 tbsp almond milk • a handful of fresh flat-leaf parsley
  • • salt and pepper to season
