Sweet Potato & Pumpkin Risotto
Ingredients
- 500g sweet potato, peeled (about 1 large potato)
- • 500g jap pumpkin, peeled • 1 cup (180g) brown rice
- • 1 tbsp paprika powder
- • 1 tbsp rosemary
- • 1 tsp cinnamon
- • 1 tbsp coconut oil (or olive oil)
- • 3 tbsp apple cider vinegar (recently declared FODMAP friendly! ??) • 2 tbsp nutritional yeast (optional)
- • 1/2 cup coconut cream
- • 1 lime
- • 2 tbsp almond milk • a handful of fresh flat-leaf parsley
- • salt and pepper to season
