Almond-Based Stevia Cheesecake with Lemon Zest
Ingredients
- 1 cup almond meal
- 1/3 cup @goodgoodbrand stevia
- 2 tbsp coconut oil
- Vanilla essence
- 1 tub Philadelphia/cream cheese
- 3 eggs
- 3 tbsps @goodgoodbrand stevia
- Vanilla essence
- Lemon zest + 1 tbsp juice
Preparation
Preheat the oven to 180°C (350°F).
In a bowl, mix almond meal, stevia, coconut oil, and a few drops of vanilla essence to form the base mixture.
Press the base mixture into the bottom of a springform pan, creating an even layer. Bake for 10 minutes.
While the base is baking, prepare the filling. In a bowl, combine the Philadelphia/cream cheese, eggs, stevia, vanilla essence, lemon zest, and lemon juice. Mix until well combined.
Once the base is baked, remove it from the oven and let it cool for about 10 minutes.
Pour the cream cheese filling over the cooled base, spreading it evenly.
Bake the cheesecake for 44 minutes at 175°C (350°F) or until the filling is set and the edges are slightly golden.
Remove the cheesecake from the oven and allow it to cool completely before refrigerating for a few hours or overnight.
Once chilled and set, remove the cheesecake from the refrigerator, release it from the springform pan, and slice.
