Avocado and ?Peach Porridge

Ingredients

  • ripe peach
  • 1 cup oats (grab gluten free)
  • 1 tbsp unsweetened coconut flakes
  • 1 tbsp chia seeds
  • 1.5 cups water
  • 1/2 an avocado, finely sliced

Preparation

  1. Slice peaches into cubes (save 1/4th for topping) ??Add the gluten-free oats, chia seeds and water - cook on medium heat

  2. The peach should start to break down

  3. Add oats into bowl when done with the remaining peach and avocado

  4. Sprinkle over some crunchy toppings of your choice (almonds, flaxseeds, etc) and add a little coconut or almond milk if desired

  5. Oats should have been naturally sweetened by the peach but if you need a bit more of a sweet fix, a drizzle of maple syrup will do the trick
