Blueberry & Passion Fruit Mochi Breakfast Pudding

Ingredients

  • 50g gluten-free oats
  • 5g chia seeds
  • 30g vanilla vegan protein
  • 110ml water
  • 240ml almond milk

Preparation

  1. Mix the gluten-free oats, chia seeds, vanilla vegan protein, water, and almond milk in a saucepan the night before.

  2. Cook the mixture in the saucepan until it becomes thick and creamy.

  3. Pour the mixture into a small bowl that has been run under cold water to prevent sticking.

  4. Add a spoonful of jam in the center of the mixture.

  5. Place the bowl in the fridge overnight.

  6. Gently ease the edges of the pudding with a knife if needed.

  7. Turn the bowl upside down onto a plate to release the pudding.

  8. Almond milk yogurt
