Broccarrot Soup
Ingredients
- broccarrot soup
- you will need:
- oil
- 1/2 an onion
- 1/2 tsp paprika
- 1/2 tsp thyme
- 1/2 tsp all purpose seasoning
- 1/2 tsp salt
- 1/4 tsp coriander powder
- 1/4 tsp cumin powder
- 2 bay leaves
- 2 small - medium carrots diced
- 1 pint of water (more if needed)
Preparation
Heat some oil in the pressure cooker/saucepan
Add the onion along with the spices and saute for a few minutes
Add the broccoli florets, diced carrots, 2 bay leaves and 1 pint of water, place the lid of the pressure cooker on and cook for approx 8 mins
If you're using a saucepan you may need longer
Remove from the heat (don't forget to remove the bay leaves) and use a handheld blender to puree till smooth
If you find the soup is too thick for your liking, simply add more water and return to the boil till it reaches the desired consistency
Check for seasoning and adjust if necessary
Garnish with parsley, coriander or croutons and enjoy
