Homemade Broccoli and Carrot Soup
Ingredients
- oil
- 1/2 an onion
- 1/2 tsp paprika
- 1/2 tsp thyme
- 1/2 tsp all purpose seasoning
- 1/2 tsp salt
- 1/4 tsp coriander powder
- 1/4 tsp cumin powder
- 2 bay leaves
- 6 - 7 broccoli florets
- 2 small - medium carrots
- 1 pint of water (more if needed)
Preparation
Heat some oil in the pressure cooker or saucepan.
Add the onion along with the spices and saute for a few minutes.
Add the broccoli florets, diced carrots, 2 bay leaves and 1 pint of water, place the lid on and cook for approximately 8 minutes in a pressure cooker. If using a saucepan, you may need longer.
Remove from the heat, remove the bay leaves, and use a handheld blender to puree until smooth. If too thick, add more water and boil to desired consistency. Check and adjust seasoning if necessary.
Garnish with parsley, coriander or croutons and enjoy.
