Buckwheat Banana Bread

Ingredients

  • 1 1/2 cups buckwheat flour
  • 1/4 cup ground flaxseed
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • Pinch of salt
  • Sprinkle of cinnamon + nutmeg
  • 3 super ripe bananas
  • 1/3 cup applesauce
  • 1/2 cup brown sugar (or other sugar)
  • 1 tsp vanilla

Preparation

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.

  2. In a bowl, mash the bananas with a fork and mix in the rest of the wet ingredients (applesauce, brown sugar, and vanilla).

  3. In another bowl, whisk together the dry ingredients (buckwheat flour, ground flaxseed, baking soda, baking powder, salt, cinnamon, and nutmeg).

  4. Add the dry ingredients to the wet ingredients and mix until just combined. Avoid overmixing.

  5. Optional: Fold in 3/4 cup chopped walnuts or chocolate chips for added flavor and texture.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the banana bread to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.
