Cauliflower and Green Pea Soup

Ingredients

  • 1 small onion
  • 200 g cauliflower
  • 500 ml water
  • 1 vegetable bouillon cube
  • 300 g green peas (frozen)
  • a little bit of olive oil

Optional toppings

  • parsley
  • hemp hearts
  • sesame oil
  • finely chopped cauliflower pieces

Preparation

  1. Finely chop the onion and sauté in a little bit of olive oil in a pot on medium heat for a few minutes until it’s softened, stirring every now and then.

  2. Chop the cauliflower into smaller pieces and add to the pot together with water and vegetable bouillon, put a lid on and let simmer for about 10-15 minutes until the cauliflower softens.

  3. Add the peas and let simmer for 3-4 minutes.

  4. Take off the heat and use a handheld blender to blend it smooth.
