Cauliflower and Green Pea Soup
Ingredients
- 1 small onion
- 200 g cauliflower
- 500 ml water
- 1 vegetable bouillon cube
- 300 g green peas (frozen)
- a little bit of olive oil
Optional toppings
- parsley
- hemp hearts
- sesame oil
- finely chopped cauliflower pieces
Preparation
Finely chop the onion and sauté in a little bit of olive oil in a pot on medium heat for a few minutes until it’s softened, stirring every now and then.
Chop the cauliflower into smaller pieces and add to the pot together with water and vegetable bouillon, put a lid on and let simmer for about 10-15 minutes until the cauliflower softens.
Add the peas and let simmer for 3-4 minutes.
Take off the heat and use a handheld blender to blend it smooth.
